Okay this has been a weekly addition to our dinners all throughout winter this year – and for good reason! Full of so much goodness, delicious and immune boosting, what’s not to love!
Just a note on bone broth – absolutely feel free to make your own! I use a variety of different options, the super markets these days often have some great quality bone broths – look for ones in the fridge section! Nourishing Chicken Soup
- 1L chicken bone broth – see explanation above
- 800g chicken thighs
- 1 brown onion finely chopped
- 1 tbsp grated ginger
- 3 cloves crushed garlic
- 1 tbsp Italian herbs
- 1 tsp turmeric – optional
- few sprigs of fresh thyme finely chopped
- 2 carrots roughly chopped
- 3 celery stalks chopped
- To serve – fresh lightly steamed greens and noodles of choice
- place 1tbsp olive oil in a large pot over a medium heat
- Cook the chicken thighs in batched until lightly browned on each side – remover and set aside
- Heat another tbsp of oil in the pan and cook off the onion, garlic and ginger with a pinch of salt until soft then add in the carrot and celery cooking for another minute
- Add the chicken back to the pan with the rest of the ingredients and bring to the boil
- Once it is boiling turn the heat down to a simmer and cook, covered, for 30minute to an hour or until the chicken is soft
- Shred the chicken with two forks and check the broth for seasoning before serving in big bowls with noodles and extra greens if you desire!
Note: alternatively cook off your chicken, onion, garlic and ginger and then chuck everything into the slow cooker and cook on low for 5 hours.
