Peanut Butter & Banana Skillet

Okay this is kind of like a mix between a giant cookie, and a choc chip blondie, so basically it is a skillet full of heaven. So delicious, made with all wholesome ingredients! Make sure you don’t skimp on the chocolate chips and serve it with plenty of ice cream and it will be happy days!

  • 1 banana mashed approx 150g 
  • 1 egg and 1 yolk
  • 1 tsp Vanilla
  • 1/2 cup Natural crunchy peanut butter 
  • 2 tbsp olive oil
    3/4 cup coconut sugar
  • 3/4 cup whole spelt flour
  • Pinch of Salt
  • 1/2 tsp baking soda 
    1/2 cup dark chocolate chips
  • 1/3 cup walnuts 
  • Ice cream to serve
  1. Preheat your oven to 175°C and lightly grease an oven proof skillet
  2. Mix together the banana, eggs, vanilla, peanut butter and oil, then add the dry ingredients and fold until well combined.
  3. Fold through the chocolate and nuts, reserving some for the top!
  4. Pour the mixture in the skillet and sprinkle with the remaining chocolate and nuts
  5. Bake for around 20 minutes or until golden
  6. Serve with a scoop of ice cream straight from the pan!!
