Sleepy Time Rocky Road

So in the last 12 months sleep and sleep quality has become a HUGE priority for me. Having a good sleep can improve my moods, digestion, weight loss, better workouts and a whole host of other things! So that is why I recently started taking Adrenal Switch before bed time. It is a magnesium supplement that also contains a bunch of other amazing ingredients including Ashwagandha, one of the most amazing adaptogenic herbs going around. An adaptogen actually helps the body to deal with the negative impacts of stress – so pretty much everyone should be taking some form in the modern world!

So for this recipe I used the Adrenal Switch in the ‘strawberry pineapple’ flavour to make the delicious berry gummies which note ALSO contain gelatin – hello healthy guts! But I also chose to add sour cherries into the mix, why you might ask? WELL! Cherries are one of the very few foods that contain melatonin! Melatonin is a hormone your body naturally produces when it is time for sleep and can actually help to regulate your circadian rhythm. However, with our increased access to artificial light we tend not to produce adequate amounts of it to help with our sleep THUS having a slice (or two) of this rocky road might just give you a fantastic hit of magnesium, ashwagandha & melatonin…win win win!

Sleepy Time Rocky Road

2 1/2 cups water

2 ½ cups water

4 heaps tbsp gelatin powder

4 serves Adrenal Switch Strawberry Pineapple Flavour

¼ cup frozen raspberries – thawed

  1. Place ½ a cup of water into a small bowl and sprinkle the gelatin over the top, stir to combine and set aside to ‘bloom’
  2. Place the remaining 2 cups of water into a small saucepan over a low heat and add in the adrenal switch
  3. Mash the thawed raspberries through a sieve into the water to add in some additional colour without the seeds
  4. Once the water is warm but not bubbling take it off the heat and add in the gelatin, stirring until most of it has dissolved
  5. Pour the mixture through a sieve into a lined tray and place into the fridge to set for a few hours and then chop into squares – store in the fridge if not using in the rocky road

250g of the gummies chopped into squares

½ cup sour cherries dried

½ cup dry roasted almonds

¼ cup pistachios

1/3 cup shredded coconut

1/2 cup freeze dried raspberries or strawberries

250g good quality 70-90% dark chocolate

  1. Place everything into a bowl apart from the chocolate
  2. Melt the chocolate slowly in the microwave or over a bain-marie
  3. Allow the chocolate the cool slightly before pouring over the other ingredients and mixing gently to coat everything well
  4. Spoon the mixture into a lined baking tray and place into the fridge to set
  5. Chop up and store in the fridge! Enjoy a slice before bed preferably with a cup of tea!
