Snickers Easter Eggs

These are seriously rich and delicious and just so happen to be made with a few nutritious ingredients! Use whatever shaped molds you like, obviously the shape and size will change how many servings you get! This is only a small batch recipe so feel free to double of even triple it!

Snickers Easter Eggs – makes 4 large half eggs or 2 full sized eggs

200g Dark chocolate

5 medjool dates

1/2 cup crunchy peanut butter

2 tbsp honey or maple syrup

1/4 cup roasted peanuts roughly chopped

  1. Melt 3/4 of the chocolate in the microwave slowly
  2. Spoon some of the chocolate into your molds and swirl around to coat it, allowing excess to drip back into the bowl
  3. Place your molds into the fridge to set for 10-15 minutes
  4. Repeat step 2, two more times until you have a nice thick egg shell
  5. Allow to set full for at least an hour before filling
  6. Soak the dates in boiling water for 5 minutes
  7. Place the drained dates, peanut butter and honey into a small food processor and blend until sticky
  8. Stir through the chopped nuts
  9. Spoon the mixture into your molds and flatten the surface of each
  10. melt the last of the chocolate and pour over each mold to seal the eggs
  11. Place into the fridge to set for a few hours or overnight before removing from the molds
  12. If you want to stick the halves together, melt a small amount of additional chocolate and use it as a ‘glue’ to stick the two halves together
