These are seriously rich and delicious and just so happen to be made with a few nutritious ingredients! Use whatever shaped molds you like, obviously the shape and size will change how many servings you get! This is only a small batch recipe so feel free to double of even triple it!
Snickers Easter Eggs – makes 4 large half eggs or 2 full sized eggs
200g Dark chocolate
5 medjool dates
1/2 cup crunchy peanut butter
2 tbsp honey or maple syrup
1/4 cup roasted peanuts roughly chopped
- Melt 3/4 of the chocolate in the microwave slowly
- Spoon some of the chocolate into your molds and swirl around to coat it, allowing excess to drip back into the bowl
- Place your molds into the fridge to set for 10-15 minutes
- Repeat step 2, two more times until you have a nice thick egg shell
- Allow to set full for at least an hour before filling
- Soak the dates in boiling water for 5 minutes
- Place the drained dates, peanut butter and honey into a small food processor and blend until sticky
- Stir through the chopped nuts
- Spoon the mixture into your molds and flatten the surface of each
- melt the last of the chocolate and pour over each mold to seal the eggs
- Place into the fridge to set for a few hours or overnight before removing from the molds
- If you want to stick the halves together, melt a small amount of additional chocolate and use it as a ‘glue’ to stick the two halves together
