Is it too early to be sharing Christmas recipes? Maybe. Do I care? Of course not.
It is no secret that Christmas is pretty much my favourite day of the year, and now I have taken one of my favourite Christmas recipes to the next level!
I do also have a regular version of ginger bread men right here , but if you are a peanut butter addict like me then give this twist on a classic a go this year you will not be disappointing. You could even take it a step further and make a peanut butter icing to decorate them.
Peanut Butter Gingerbread Men
- 2 cups almonds meal
- 1 cup brown rice flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup natural peanut butter – I used mayvers dark roasted crunchy peanut butter
- 1 egg
- 40ml olive oil
- 1 tsp vanilla
- 1/2 cup honey or rice malt syrup
- 2 tbsp molasses
- Pre heat your oven to 150°C
- Line a baking tray with baking paper
- Place all dry ingredients in a bowl and mix well until all the spices and evenly distributed
- Whisk all wet ingredients in another bowl
- Pour wet mix into dry and mix well with a spoon until a dough forms
- cover the dough and place into the fridge for 15 minutes
- Once chilled slightly roll out to approximately 1/2 cm thick and use a cookie cutter to cut out your men
- Place onto baking tray and bake for 15-20 minutes, longer depending on how crunchy or soft you like your biscuits – you may have to cook in batches as this recipe makes quite a few men
- Allow to cool fully before decorating and store in an airtight container at room
