PB&J Cups

B&J cups 🥜🍓 I honestly have so many lists of recipe ideas written down, but sometimes the best ones come when I just throw some stuff together without thinking too much 😂 this is a PRIME example! 🙌🏼 Honestly these are so yum, such a familiar flavours combination and such a satisfying treat! 🌼 remember I have a reel showing how to make your own coconut butter, all you need is coconut!

  • 1/4 cup thawed raspberries 
  • 1 tbsp water
  • 1 tsp Vanilla 
  • 1/2-1 tsp monk fruit or stevia 
  • 1 tbsp chia seeds 
  • 1/4 cup peanut butter 
  • 1/3 cup melted coconut butter 
  • 1 tbsp rice malt syrup or honey or maple 
  • Extra Peanut butter
  • 100g dark choc melted 

1. Combine the jam ingredients together and set aside to thicken 

2. Line a muffin tray with cupcake liners (did anyone else call these patty pans? No? Just me?

3. Combine the peanut layer ingredients in a bowl and use a spoon to divide between 6 muffin cups pressing down gently, place into the free for 15 mins to set

4. Place a tsp of the jam onto each cup, and a tiny bit of extra Pb if you want! Then top each with melted chocolate to cover the jam 

5. Place back into the fridge or freezer to set fully!
