This has got to be the millionth granola recipe I have shared on my blog, but I just can’t help myself. Whether I am sprinkling it over my smoothie bowls or piling it into my mouth straight from the jar, I am a granola addict.
This recipe makes the most perfect crunchy clusters they could totally pass as mini cookies, just saying…
I kept it nice and simple but feel free to add in nuts and seeds and mix up the dried fruit. Although I do recommend trying the inca berries because the tartness of the fruit goes amazingly in this mix.
Chocolate Buckini Clusters
- 2 cups raw buckwheat
- 2 cup coconut flakes
- 3/4 cups dried inca berries
- 1 tsp vanilla
- pinch of salt
- 1/2 cup coconut nectar
- 1/2 cup raw cacao powder
- Pre heat oven to 160c
- Place all ingredients into a large bowl and mix well to combine and coat everything evenly – this can take a bit of work just keep mixing until it is sticky
- Spread the mix out onto a lined tray and bake for around 15-18 minutes, stirring at least once – keep an eye on it as the edges can burn easily
- Allow to cool fully before breaking up into clusters and storing in an airtight container
