I don’t know how anyone can go a whole day without snacking, snacks = life.
I am always on the look out for new delicious snack ideas for myself but also for Adam to take to work with him. These muffins are perfect as they transport well and are packed full of nutritious ingredients to keep him satisfied throughout the afternoon!
Choc Peanut Butter Protein Muffins – makes 8 muffins
- 1 banana mashed
- 1 tsp vanilla
- 2 eggs
- 1/3 cup milk kefir or natural yoghurt
- 2 tbsp peanut butter
- 1/3 cup chocolate protein powder
- 2 tbsp cacao powder
- 2 tbsp powdered stevia
- 1/2 cup almond meal
- 1 tsp baking powder
- 1/4 tsp salt
- 50g 80% dark chocolate roughly chopped
- Pre heat oven to 160c and line a muffin tray with cupcake liners
- whisk together banana, eggs, kefir, vanilla and peanut butter in a large bowl
- Add the rest of the ingredients and mix until smooth
- Bake muffins for 20-25 minutes or until a skewer inserted in the centre comes out clean
