Chocolate Hazelnut Thumbprint Cookies

Okay so Nutella has always been my biggest weakness. I mean show me someone who doesn’t love Nutella, I dare you.

These cookies are delicious, crunchy on the outside and chewy in the middle and with a dollop of hazelnut spread in the centre? YUMBO. Of course feel free to use Nutella in this recipe, sometimes you just gotta live a little, but I used the new Nuttvia which is a fantastic alternative! You could also use all natural hazelnut butter, or even just melted dark chocolate!

Chocolate Hazelnut Thumbprint Cookies

  • ¾ cup almond meal
  • ½ cup coconut flour
  • ¼ cup melted coconut oil
  • ¼ cup rice malt
  • 2 tbsp cacao powder
  • pinch salt
  • ½ tsp baking powder
  • 1 tsp vanilla
  • 2 tbsp desiccated coconut
  • 1/2 cup hazelnut spread (I used Nuttvia)
  1. Pre-heat a fan forced oven to 160
  2. Place all dry ingredients into a bowl and stir to combine
  3. Add the rice malt syrup and coconut oil and mix well
  4. Roll into balls and place onto a lined baking tray, press an indentation into the center of each ball using your thumb
  5. Bake the cookies for 10-15 minutes, watching until they begin to brown, the cookies with harden once cool
  6. Allow the cookies to cool fully
  7. Place the hazelnut spread into the microwave for 20 seconds to soften slightly
  8. Spoon teaspoons of the spread into the center of each cookies
  9. Enjoy!
