Okay so Nutella has always been my biggest weakness. I mean show me someone who doesn’t love Nutella, I dare you.
These cookies are delicious, crunchy on the outside and chewy in the middle and with a dollop of hazelnut spread in the centre? YUMBO. Of course feel free to use Nutella in this recipe, sometimes you just gotta live a little, but I used the new Nuttvia which is a fantastic alternative! You could also use all natural hazelnut butter, or even just melted dark chocolate!
Chocolate Hazelnut Thumbprint Cookies
- ¾ cup almond meal
- ½ cup coconut flour
- ¼ cup melted coconut oil
- ¼ cup rice malt
- 2 tbsp cacao powder
- pinch salt
- ½ tsp baking powder
- 1 tsp vanilla
- 2 tbsp desiccated coconut
- 1/2 cup hazelnut spread (I used Nuttvia)
- Pre-heat a fan forced oven to 160
- Place all dry ingredients into a bowl and stir to combine
- Add the rice malt syrup and coconut oil and mix well
- Roll into balls and place onto a lined baking tray, press an indentation into the center of each ball using your thumb
- Bake the cookies for 10-15 minutes, watching until they begin to brown, the cookies with harden once cool
- Allow the cookies to cool fully
- Place the hazelnut spread into the microwave for 20 seconds to soften slightly
- Spoon teaspoons of the spread into the center of each cookies
- Enjoy!
