If you haven’t yet heard of the Dalgona Coffee trend, where have you been?! I am obsessed with the frothed coffee and just had to fine other ways to use it! Enter…the coffee muffins!
- 40g vegan vanilla protein powder
- 1/3 cup almond meal
- 1/4 cup oat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp instant coffee
- 1 mashed banana
- 2 eggs
- 1/3 cup natural yoghurt
- 40g honey or rice malt
- 100g chopped dark chocolate
- 3tbsp instant coffee
- 3 tbsp hot water
- 2 tbsp raw sugar
Pre-heat your oven to 170°C and line a muffin tray with cup cake liners combine all dry ingredients in a bowl and set aside.
Combine all wet ingredients and add to the dry folding to combine.
Add in the chocolate and mix .
Divide batter between 6 muffin trays and bake for 25-30 minutes or until browned and a skewer inserted comes out clean. Allow muffins to cool fully.
Using an electric mixer whisk together all of the frothed coffee ingredients together until it resembles whipped cream Top the cooled cupcakes with the whipped coffee and serve immediately!
