Whether or not you are getting involved in Veganuary, you can’t go wrong with overnight oats! I’ve taken it up a level by combining the two best things about breakfast- oats and coffee! I used Califia Farms XX Espresso Cold Brew Coffee and coconut yoghurt in these oats to keep them vegan and they are honestly so creamy and delicious. Feel free to leave out the psyllium husk but it’s always good to increase your daily fibre intake. 👏🏼 You can pick up a bottle of Califia Farms XX Espresso Cold Brew Coffee from the fridge at Woolworths. Cold Brew Overnight Oats – serves 3-4
2 cups rolled oats
2 tbsp chia seeds
1 tsp psyllium husk
2 cups of Califia Farms XX Espresso Cold Brew Coffee
1⁄2 cup coconut yoghurt
2 tbsp maple syrup – optional
1. Combine all ingredients in a large bowl stirring to combine well
2. Cover and place into the fridge for a few hours or overnight
3. Serve the oats with fruit, nut butters and extra Califia Farms XX Espresso
