Salmon is definitely one of my favourite protein sources so it is just a bonus that it is incredibly quick cooking too! I used the Steam Bake Function on my new Electrolux Steam Oven to make this tray bake. It ensured the salmon didn’t dry out but ALSO the potatoes came out soooo soft inside but still crispy skinned!
This recipe can still be made without steam just adjust cooking times accordingly! This makes delicious leftovers as well or could be used as an awesome meal prep option!.

One Tray Salmon Bake – serves 4
4 salmon fillets
2 tbsp seeded mustard
2 tbsp olive oil
1 tbsp honey
Salt + pepper
2 bunches of cherry tomatoes on the vine
1 bunch of asparagus
12 new baby potatoes
2 tsp Italian seasoning
1 tbsp olive oil
- Pre-heat oven to 180 degrees Celsius on the steam function
- Place the potatoes into a bowl, drizzle over the olive oil and Italian seasoning and stir to coat
- Arrange the potatoes in a large baking tray and place into the oven for 15 minutes
- Combine the mustard, olive oil, honey, salt and pepper in a small bowl
- Once the potatoes have been cooking for 15 minutes place the salmon into the baking tray and drizzle the mustard mixture over each fillet.
- Arrange the asparagus and tomatoes around the tray and place back into the oven for 10-15 minutes or until the salmon is cooked to your liking
- Serve immediately with fresh salad leaves
**this works well for meal prep too, simply divide into Tupperware containers after cooking and store in the fridge until ready to reheat
