This granola is so simple and SO tasty. Amazingly crunchy and toasty lightly spiced with cinnamon you really wont miss the excess sugar that is normally stuffed into granola.
This recipe is really easy to double or triple to make an extra big batch and you can also customize it to suit your tastes! Use whatever nuts and seeds and spices you like!
LCHF Granola
- 1 cup almonds
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1 cup coconut chips
- 1/3 cup flaked almonds
- 1 tsp cinnamon
- 2 tsp stevia
- 2 tbsp ghee – melted
- 2 tbsp coconut oil – melted
- 1 tbsp honey or rice malt syrup
- pinch of salt
- Pre heat your oven to 160C and line a tray with baking paper
- Place your whole almonds, pumpkin seeds and sunflower seeds into a food processor and pulse until roughly chopped
- Pour into a large bowl and add the rest of the ingredients
- Mix until all ingredients are coated and sticky
- Spread out on the tray and place into the oven for 15-20 minutes, tossing half way through. Be careful as it can burn easily so watch it!
- Store in an airtight container – delicious on top of your smoothie bowl
