It really is so simple to create a beautiful cake which is made entirely from wholesome nutritious ingredients, and this cake is exactly that!
Made with almond and rice flour this cake it naturally gluten free without sacrificing flavour or texture! I haven’t made this cake overly sweet, so feel free to use more honey if you have a sweet tooth, but with the chocolate I really don’t think it is needed.
Enjoy this cake in the spring sunshine with the last of the winter citrus!
Orange Almond and Dark Chocolate Cake
- 2 cups almond flour or meal
- 1/4 cup brown rice flour
- zest of one orange
- juice of 1/2 an orange
- 4 eggs
- 1/2 cup honey
- 1 tsp baking powder
- pinch of salt
- 100g dark chocolate 70% or darker, roughly chopped
- 1 tsp vanilla
- flaked almonds, to top
Pre heat a fan forced oven to 165c
Place almond flour, rice flour, baking powder and salt into a large bowl and set aside
In a seperate bowl whisk together the eggs, honey, orange juice + zest and vanilla
Combine wet with dry and fold to combine
Fold through the chopped chocolate
Pour the batter into a lined cake tin and sprinkle over the flaked almonds
Place into the oven for 25-30, watching that it doesnt brown to quickly
Allow to cool before removing from the tin and serving!
You could serve this cake with a dollop of yoghurt or cream, or even make a simple orange syrup to drizzle, yum!
