I discovered stove top granola a little while ago and let me tell you, it is a revelation!
I am a certified granola addict, you’ll find me baking batches of granola late at night more often then not and I am in no way ashamed of this fact. Nor am I ashamed of the fact that I tend to eat it straight from the oven before any of it makes it into a bowl.
When I discovered that you could make granola in a frying pan which is just as crunchy and delicious as granola made in the oven I was stoked. It is perfect for a slow Sunday morning or when feeding a crowd!
You can obviously change up the recipe using different nuts and seeds or adding in some dried fruits! Serve it up with cold almond or coconut milk and seasonal fruits.
Stove Top Coconut & Almond Granola
- 1 cup rolled oats
- 1/2 cup shredded coconut
- 1/2 cup almonds, roughly chopped
- 1/4 cup flaked almonds
- 1/4 cup buckwheat
- 2 tbsp flaxseeds
- 1 tsp cinnamon
- 4 tbsp rice malt syrup
- 3 tbsp coconut oil
- Place all of the ingredients into a large frying pan over a medium high heat
- Cook the granola, stirring regularly, for around 10 minutes or until everything is coated and slightly toasted
- Spread granola out on a tray covered with non stick paper and allow to cool before serving or storing in an airtight container
